3 tblsp. flaxseed meal, Bob's Red Mill
3 tblsp. almond meal, Trader Joe's
2 tblsp. rice bran (not rice cereal)
2 tblsp. chia seed, milled
1 cup water (just a bit more)
1/3 tsp. Celtic sea salt
Put the water in a small saucepan. Add in the flaxmeal, almond meal and rice bran. Stir into cool water. Add salt. Turn on the heat and bring cereal to a simmer. Cook 3 to 5 minutes until it begins to thicken. Turn off heat and add the milled chia seed. Stir well and cover pot. Let sit for another 3 to 5 minutes. Serve with butter, xylitol or other sweetener, and almond milk. I like to add nuts or seeds to my bowl of cereal.
This is an easy way to increase the fiber in your diet. Serve with eggs or sausage to raise the protein content and complete the protein of the meal.
